Tinde ka bharta

Ingredients:
  • Round gourd(Tinda) – 500 gms, medium-sized, peeled, boiled,  minced in a mixer
  • Butter – 3/4 cup
  • Onions – 1 cup, chopped
  • Tomatoes – 1 cup, chopped
  • Garlic chopped : 3 tbsp
  • Cumin Seeds – 1 tsp, roasted
  • Red Chilli Powder – 1 tsp
  • Coriander Powder – 1 tsp
  • Jeera Powder – 1 tsp
  • Garam Masala – 1 tsp
  • Salt to taste
  • Green Chillies – 5
  • Green Coriander – 2 tbsp, chopped 

Method:
  • Heat butter in a kadai, add jeera and garlic.
  • Add onions let it sauté till it turns translucent then add tomatoes and fry for a while.
  • Add red chilli powder, salt, turmeric powder, jeera powder, coriander powder and mix well.
  • Cook until the tomatoes turn soft.
  • Add the tinda and cook covered on low heat.
  • Bhuno for half hour, the trick is to bhuno it the best. In end add garam masala and coriander leaves
  • Serve hot, garnished with green chillies and coriander.
